Why Is Kombucha Called Mushroom Tea?

Kombucha is often referred to as mushroom tea because of the SCOBY (Symbiotic Culture Of Bacteria and Yeast) culture that forms on top. This organism converts sweet tea into the vinegary beverage that makes up kombucha; typically circular or disk shaped with tan/brown hues.
Once added to sweetened tea, SCOBY begins fermenting; this can take anywhere from one week up to seven days. As part of its digestive process, the SCOBY consumes sugars while producing acids and alcohol; the acidity can vary depending on how long and temperature are allowed for fermentation, with testing kits available such as Refractometer.
Once the kombucha is ready to consume, it should have a thick and spongy consistency. The SCOBY may sink or float within the tea; floating is preferred since this prevents aspergillus contamination from taking hold. Once removed from its container, it can be placed back into a fresh one to begin fermentation anew; any leftover liquid from previous batches should then be stored in your fridge.
