Dark Roast
Our dark roast is bold and rich, featuring notes of cocoa, toast and dried fruit sweetness. Our dark roast is USDA-certified organic and Fair Trade certified, using beans from Central and South American regions grown without chemicals on family farms that emphasize sustainability, including vermiculture practices as a natural pest deterrent and peppers as natural insect repellants.
Over-roasting coffee, the cause of its “burnt, bitter” reputation, creates Polycyclic Aromatic Hydrocarbons (PAHs) and acrylamide that have been linked to cancer, heart disease, cataracts and other health conditions.
Acidity, often misunderstood as “bitterness”, is an integral part of coffee flavor. Malic acid contributes to fresh apple crispiness while adding milk creates that creamy zingy effect that we all know and love so well.
Medium Roast

Decaf Roast
Decaffeinated coffee is made using 100% organic beans that have been soaked and then filtered, leaving behind flavor and oils while filtering out caffeine. After roasting in small batches to preserve delicate flavors, they are then cooled quickly in order to protect the delicate flavors that remain. Our process is environmentally-friendly while the beans used are USDA-certified organic mountain shade grown beans lab tested for heavy metals and mycotoxins.
Roasting decaf beans requires you to be more gentle with the heat, taking into account their lower density. Furthermore, start your cooldown cycle sooner as they absorb less heat than caffeinated ones and expand at a much slower pace.
As roasting decaf is different than roasting regular coffee, its first crack may not produce the usual pop. Therefore, it is crucial that you pay close attention to its aroma – sweet vinegar-like aroma should indicate when first crack has occurred. Furthermore, using consistent test batches will allow you to learn how it roasts more accurately so you can make more accurate predictions regarding time, temperature and airflow.
