N Joy Dubost of Pennsylvania State University conducted research evaluating the antioxidant potential of four specialty mushrooms: Dictyophora indusiata (basket stinkhorn), Grifola frondosa (maitake), Hericium erinaceus (lion’s mane) and Tricholoma giganteum (white matsutake). Methanolic extracts were prepared from each species, then tested against 1,1-diphenyl-2-picrylhydrazyl (DPPH) as well as against ferrous ions (reducers).

Results revealed that methanolic extracts of mushrooms exhibited strong antioxidant activities, with scavenging capacities ranging from 75.0 to 69.4% and reducing power against ferrous ions of up to 91.9%. Fortifying tagliatelle pasta with these extracts led to an improvement of both DPPH and FRAP values by up to 2.7 and 2.8 times, respectively, suggesting their scavenging and reducing activities may be utilized safely as food additives to increase antioxidant properties or anti-inflammatory qualities of final food products.
