Lion’s Mane

Lion’s mane fungus is an exotic edible fungus widely recognized for its striking resemblance to lion hair. A delicacy in some Asian countries, and also grown as supplements or added to functional beverages. Packed with protein and B vitamins, this mushroom has also been known to boost immunity, improve cognition and decrease stress levels while possibly decreasing cancer risks and aiding weight loss.

Fungus Hericium erinaceus can be found throughout North America and Europe forests, typically growing a spherical cluster of white spines resembling a mane on a lion. Commonly referred to as bearded tooth fungus or pom-pom mushrooms, this fungus typically thrives on Ash, Beech, Maple trees and can be eaten raw, cooked or dried; often featured as an ingredient in soups, stews and stir fries – it’s even included as part of vegan/ vegetarian dishes!

As it has a mild, natural sweetness and tender texture that mimics shellfish, sweetcorn is often used as an accompaniment or replacement for seafood dishes. Furthermore, sweetcorn plays an integral part in some Asian cuisines’ soups and stews, making it popular with those who have shellfish allergies as it can be easily grilled, baked or fried to create crab cakes!

Studies suggest that lion’s mane may help promote brain health and protect against Alzheimer’s disease and dementia; however, more research must be conducted in order to verify these claims. One trial showed that it helped slow cognitive function decline among people over age 50 while improving symptoms of depression and anxiety among menopausal women.

Chaga

Chaga (Inonotus obliquus), widely considered one of the world’s most powerful adaptogens, has long been revered as an immune support. Growing on Birch trees in colder climates and revered as one of the oldest medical remedies around – this charcoal-looking fungus has long been revered as one of the most potent anti-inflammatory herbs with natural health benefits including antimicrobial, antitumor, blood sugar-reducing, and immune boosting capabilities.

Chaga is packed with antioxidants that can protect cells from oxidative damage and boost energy levels and mood, providing energy increases as well as improving mood. Chaga also acts as an anti-inflammatory and promotes cell health – as well as being used to soothe digestive issues such as ulcers, indigestion and IBS symptoms.

Chaga must be brewed slowly at temperatures below boiling in order to extract its medicinal compounds, with many sources suggesting brewing for two days at temperatures lower than boiling in order to release some key phytochemicals present in chaga that are damaged at higher temperatures and only become available again at lower temps.

Reishi

Reishi (Ganoderma lucidum) fungus is widely known as an adaptogen, helping your body cope with stress and strengthen your immune system. Reishi has long been used in traditional Asian medicine as an elixir of life; cancer patients, multiple sclerosis sufferers, myasthenia gravis sufferers, high blood pressure patients, liver disease patients and insomnia sufferers can use Reishi as well as improving energy levels, mental function and even improving energy levels through nutritional products like powder supplements or teas.

Reishi contains beta-glucans, complex sugars which slow tumor growth and prompt white blood cells to target abnormal — even cancerous — cells. Studies indicate that Reishi may help both prevent cancer as well as treat existing cases, while further research shows it could potentially lower blood sugar levels and thus decrease diabetes and heart disease risks.

However, its effects on humans are poorly studied; most evidence relies on animal or test tube studies; only one small double-blind trial has been completed with humans as subjects.

Reishi can increase the risk of bleeding when taken with medicines that interfere with blood clotting, including aspirin, warfarin (Coumadin), heparin, clopidogrel (Plavix), pentoxifylline (Trental) or ticlopidine (Ticlid). Reishi could interfere with certain anticoagulants or increase seizure risk among those suffering from seizure disorders – please consult with a physician prior to using Reishi and also avoid it during pregnancy or breastfeeding periods.

Enoki

Enoki mushrooms are long, thin white mushrooms popularly used in Asian cuisine. Sold in clusters, enoki add a delicate flavor to soups, hot pots, stir-fries and more while providing plenty of antioxidants, B vitamins, fiber and other beneficial components to our diets – helping boost immune functions while potentially inhibiting cancerous cell growth.

Golden needle mushrooms or lily mushrooms are an integral component of many traditional Japanese and Chinese dishes, featuring prominently as one variety of the mushroom Flammulina velutipes with clusters of long, thin stems with small caps at their ends. Available both fresh or dried for purchase, golden needle mushrooms can be used in salads, hot pots, soups or noodles dishes for delicious results.

Enoki mushrooms can be enjoyed raw, but for optimal results it should be lightly cooked for best results. Their mild flavor and crunchy texture makes for quick preparation time of two minutes or less; rinse and drain to remove any excess moisture before cooking to achieve maximum flavor! Enoki makes an ideal addition to soups and stews alike as well as pasta or rice dishes; you could also create nametake, which entails simmering them with soy sauce, mirin, sake, sugar and rice vinegar until tender before adding as a sweetener!

Enoki has long been used in traditional medicine to treat stomach disorders, manage blood pressure and promote liver health. Packed full of vitamins and nutrients such as polysaccharides that reduce oxidative damage while improving memory, Enoki can also regulate the activity of neurotransmitters like acetylcholine and serotonin as well as provide phenolic acids such as protocatechuic acid, p-coumaric acid and ellagic acid which have anticancer effects and help slow growth of throat cancer as well as liver, breast cancer.

Cordyceps

Cordyceps is an age-old traditional Chinese tonic used to enhance health. Studies have demonstrated its anticancer, aphrodisiac, and performance-boosting benefits; furthermore it may stimulate liver and kidney functions, alleviate fatigue and enhance blood circulation. Cordyceps is typically made in Himalayan regions of China and Tibet from growing fungus on caterpillar larvae Thitarodes armoricanus larvae which then becomes Ophiocordyceps sinensis or Chang Shan and dried for use in beverages and dishes alike.

Cordyceps genus boasts over 350 species. Many of these fungi parasitic on insects contain various bioactive compounds; cordycepin is perhaps its most notable metabolite; other notable ones include polysaccharides, sterols, flavonoids and cyclic peptides.

Cordyceps may not be as common as chaga or lion’s mane mushrooms, but it can still be found at certain specialty health stores and restaurants. Since growing the right spores can be challenging in typical mushroom-farming labs, cordyceps is typically grown using purchased spores purchased from suppliers for cultivation.

Cordyceps has long been revered among athletes due to its purported abilities to increase energy and muscle endurance. One 2022 study indicated that taking cordycepic acid prior to engaging in high intensity workout increased muscle ATP levels – helping muscles use oxygen more effectively while providing energy boosts for greater performance.

To prepare Cordyceps tea, boil a pot of water and let the spores steep for three minutes in it before straining and adding sugar as desired – they should rise to the surface of the water in your pot! Your beverage should have both sweet and earthy notes in its taste profile.
