Flavor

Tea flower mushroom has an exquisite and subtle flavor, and makes an excellent light alternative when used in fish dishes as it won’t overpower delicate flavors like those found in steamed fish dishes. Hong Kong markets offer over 10 types of shiitake mushrooms, each categorised according to their origins and forms. Of these varieties, three of the most popular are xiangxin, flower shiitake and winter mushroom; among these xiaangxin is less soft than flower shiitake and features obvious cracks on its cap (known locally as “baau fa”). Mushrooms come in all sorts of varieties, each one with specific temperature requirements for transformation. Their cultivation process is very laborious and expensive due to high demand and unique production methods; making this variety one of the more expensive types.

Storage

Mushrooms contain 80-90% water, so to maintain freshness they must be kept dry. Chef Traci Weintraub recommends keeping whole mushrooms stored in paper bags or wrapped in towels prior to storage; the paper will absorb excess moisture, helping prevent spoilage. Alternatively, refrigerating mushrooms extends their shelf life for another few days; just ensure you store them away from strong-scented food as they will absorb their odors.

Storage with a vacuum sealer will significantly extend their shelf life; otherwise, using a resealable plastic bag works. You could add a desiccant packet (the kind found in supplement bottles) as this absorbs moisture as well. Keeping them in a cool, dark area would be best.

Teas: Storing mushroom tea in the fridge will extend its shelf life and ensure maximum flavor and texture retention. Doing this, however, is best because temperature fluctuations could alter its flavor or degrade its quality over time.

Chocolates and Gummies: If stored properly in a cool, dark environment, chocolates and gummi bears can last several months without expiration. Be wary of direct heat sources as prolonged exposure degrades magic mushrooms’ potency over time.

Tinctures: Alcohol in mushroom tinctures will keep them fresh for months or even years when stored away from light, provided it’s used correctly. Many people employ the “double extraction technique,” where mushrooms are immersed both in alcohol and cold water to further extend shelf life; there are a variety of other approaches as well.

If you purchase dried tea flower mushrooms, store it in an airtight container in a cool, dark location. To determine its shelf-stability period, look for labels with production dates or seek guidance from suppliers.
